What is Crust King?

Crust King is a Baking Steel for use in your home oven, and helps you create restaurant quality pizza.

The trick to achieving great pizza is by cooking it at a very high temperature, which gives you that signature crispy crust and fluffy interior. You may be used to seeing restaurants use dedicated pizza ovens, that can reach much greater temperatures than typical home ovens, and as a result, homemade pizzas fall flat - literally!

Wondering what a Baking Steel is? Well, it's as simple as it sounds, a thick (6mm) and heavy (7kg) sheet of Mild Steel that acts as a thermal heatsink and accelerates heat transfer into the dough, mimicking the effect of a traditional pizza oven, and giving you a perfect crust.

What makes Crust King different?

Other Baking Steels are either made from Stainless Steel - which performs less well than Mild Steel due to its lower thermal conductivity - and those that are made from Mild Steel, rely on regular maintenance through a process known as seasoning. This is a very tiresome process where thin coats of oil must periodically be baked onto the steel to maintain the non-stick characteristics, and prevent rust and corrosion. If this isn't done regularly, then it can deteriorate and start to look like the example shown above.

What about a Pizza Stone?

Pizza stones make use of the exact same concept as a steel, however steel is significantly more thermally conductive, meaning it transfers heat much faster, resulting in a quicker cooking time and a crisper base. Oh, and they're also better at retaining their heat, meaning you can batch cook pizzas to keep the party going!

Not to mention, stones are susceptible to cracking without prior warning, where your steel will last you for years of use, as they're virtually indestructible.

How to use Crust King?

For best results, the Crust King Baking Steel must be pre-heated in your oven for at least 1 hour at its maximum temperature on convection setting (not fan assisted). This allows the Crust King Baking Steel to get incredibly hot, so that when you add your pizza, that heat is transferred directly into the dough, giving you a crisp base and improving rise that is simply not achievable with much thinner baking trays.
