Tomato Sauce

Ingredients
1 Can Whole Peeled Plum Tomatoes
(Brands: Mutti, Cirio, Napolina)
1 Teaspoon Italian Seasoning
1/2 Teaspoon Sugar
This simple tomato sauce is way better than anything you can buy ready made from a jar at the shop. It requires just a few simple ingredients and can be made in less than 10 minutes.
The following recipe yields enough sauce for 2 - 4 12" pizzas (depending on how much sauce you like). The recipe can be scaled for different quantities.
Instructions

1. Remove the Tomatoes from the juice in the can and put them into a bowl - the juice is quite acidic and often of a lower quality than the tomatoes themselves. This can either be discarded, or used in another recipe where it will be cooked. I wouldn't normally recommend brand-name tinned tomatoes, but here it really makes a difference, where you're using such few ingredients and aren't pre-cooking the sauce before it goes on the pizza. Mutti, Cirio, Napolina are the big three brands that you should be able to find in most supermarkets.

2. Once the whole Tomatoes have been separated from the juice, start to crush them between your fingers, making sure to remove any of the stringy bits at either end.
Don't be tempted to blend them - this incorporates air into the tomatoes and turns the sauce an orange colour, rather than vibrant red.

3. Once the Tomatoes have been broken up and any stringy pieces removed, add in the Italian Seasoning and Sugar and mix for a couple of minutes to ensure the herbs are evenly distributed and the sugar has dissolved.

4. Your sauce is now ready for use on your stretched pizza dough. You will find that you have to use less sauce than you might think, and you should still be able to see patches of the dough through it before adding your other toppings.
